Ingredients for 1 servings:
- 500 g spelt flour (wholemeal)
- 1 packet of dry yeast
- 100 ml water, lukewarm
- 1 tsp sugar
- 250 ml buttermilk, lukewarm
- ½ tsp sea salt, coarse
- ½ tsp pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes
makes a loaf of 850 g
Put the flour in a bowl, make a well in the middle, add the sugar, water and yeast and mix in with a little flour from the edge. Cover and let rise in a warm place for 15 minutes. Then knead the dough well with the remaining ingredients and let rise, covered, for 60 minutes. Then knead well again, shape it into a long shape and place the dough in a greased loaf pan. Let rise for 40 minutes. Now cut it lengthwise, brush it with water and bake for 15 minutes at 210°C (top and bottom heat) and for a further 35 minutes at 180°C. It’s best to put a small bowl of water in the oven and brush the bread with water every 10 minutes. This gives a nice crust!
