Elderberry-Lemon Balm Syrup

Ingredients for 4 servings:

  • 6 liters of water
  • 4 kg sugar
  • 200 g citric acid
  • 500 g elderflower heads
  • 400 g lemon balm or mint

Working time approx. 30 minutes; Total time approx. 30 minutes

A delicious, refreshing and healthy thirst quencher, also delicious with elderberry and mint!

To avoid destroying the vitamins, I stir the sugar and citric acid in the water until dissolved. Then I add the elderflowers and lemon balm or mint. The bucket is then covered and stored in a cool place (in the cellar). Stir twice a day. On the third day, filter everything (first coarsely, then finely) and bottle it. Tip: If you don’t have 400g of lemon balm or mint, you can use less. You can also slice organic oranges or lemons and add them.
