  • 2 eggs
  • 2 tbsp beer or highly carbonated mineral water
  • 1 tbsp sugar
  • 3 tbsp milk
  • 4 tbsp flour
  • ¼ tsp baking powder
  • 1 pinch of salt
  • 50 g butter
  • 12 elderflower umbels, with long stem
  • Oil for frying
  • Powdered sugar for dusting

Elderberry cakes

Combine the dough ingredients one at a time until a smooth batter forms (melt the butter, but do not let it get hot). The batter should remain very runny. Hold the washed and thoroughly drained flower heads by the stem, dip them in the batter, and then immediately fry in 190°C hot oil. Drain on kitchen paper and dust with powdered sugar.
