Elderflower panna cotta

Ingredients for 4 servings:

  • ½ liter cream
  • 2 large elderflower heads
  • 1 pack of gelatin
  • e.g. honey or sugar
  • possibly strawberries
  • possibly lemon balm leaves

Instructions

Working time approx. 10 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 10 minutes

Elderflower cream

Bring the cream to a boil and simmer the elderflower blossoms for a few minutes. Strain through a sieve and season with honey or sugar. Then stir in the gelatin according to the package instructions and pour the cream into molds. Refrigerate for at least 5 hours to set, preferably overnight. Turn out to serve and garnish with ripe strawberries and lemon balm, for example.
