Elderflower syrup

Ingredients for 1 servings:

  • 3 liters of water
  • 3 kg sugar
  • 30 elderflower umbels
  • 2 tbsp citric acid
  • 3 lemons, untreated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the sugar and water until the sugar has completely dissolved. Slice the lemons. Combine the elderflowers, lemons, and citric acid in a tub or large pot. When the sugar water has cooled slightly (i.e., just warm), pour it over the elderflowers and lemons and stir. Then cover with a tea towel to keep out flies. Let the brew stand, covered, for about 4 days, stirring occasionally. Then strain through a fine sieve and bottle. It will keep in the bottle for 3 years.
