Ingredients for 1 servings:

  • 2 eggs
  • 200 g brown sugar
  • 1 tbsp vanilla sugar (bourbon)
  • 1 tsp. clove powder
  • Rum flavoring or rum
  • flavoring, lemon flavoring or grated lemon peel
  • 150 g candied lemon and orange peel or fruit mix
  • 125 g ground almonds (not peeled)
  • 1 pinch of baking powder
  • 125 g hazelnuts, ground
  • 50 wafers, approx. 4 or 5 cm diameter
  • 100 g chocolate coating, white or dark
  • Pistachios, pumpkin seeds or raisins for decoration

Working time approx. 30 minutes; Total time approx. 30 minutes

Beat the eggs until frothy, add the sugar and vanilla sugar, and beat the mixture for a long time until frothy. Add the flavorings, finely diced candied lemon peel, etc. Stir in the almonds. Then add the hazelnuts, a little at a time, just enough to make the mixture spreadable. Then, using a teaspoon, spread small amounts onto the wafers. Bake at 150°C (top/bottom heat) for about 25 minutes. Let cool briefly and immediately cover with the melted chocolate coating and decorate. Once cooled, store in a tin. They taste best after they’ve been left to sit for a few days.
