Emiliy's fresh vegetable rice pan

Ingredients for 2 servings:

  • 125 g rice
  • 1 onion(s)
  • 1 zucchini
  • 2 red bell peppers
  • 1 clove(s) garlic
  • 1 can of tomatoes, peeled
  • rosemary
  • Thyme
  • Herbs of Provence
  • Salt
  • Pepper, freshly ground
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

as a side dish

Peel the onion and garlic. Dice both. Dice the zucchini and bell pepper. Cook the rice until tender. Heat the oil in a pan. Sauté the onion, then add the garlic and vegetables. Sauté everything thoroughly, then add the peeled tomatoes (chopped into small pieces with the sauce). Add the rice and season with the herbs and spices.
