Emmental tartlets

Ingredients for 4 servings:

  • 200 g flour
  • 100 g butter, cold
  • 1 egg(s), including the yolk
  • ½ tsp salt
  • Butter for the molds
  • 200 g cheese (Emmental)
  • 150 g cream
  • 2 eggs
  • salt and pepper

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Make a shortcrust pastry from flour, butter, egg yolks, and salt. Shape into a ball, wrap in foil, and chill for 1 hour. Whisk the eggs and cream. Grate the cheese, fold it into the egg mixture, season with salt and pepper, and butter 4 tartlet cases (12 cm diameter). Divide the chilled dough into 4 portions, roll out, and line the cases. Spread the Emmental mixture among the tartlets and place in a cold oven. Bake in an electric oven at 200°C (fan: 180°C/gas mark 4) for about 30 minutes. Serve with a salad.
