Ingredients for 6 servings:
- 500 g minced meat
- 1 small can of tomato paste
- 2 onions, cut into pieces
- 3 cloves garlic, finely diced
- 6 tortilla(s) (wheat)
- 1 cup sour cream
- 1 small can of corn
- 3 bell peppers, cut into small pieces
- 1 can tomato(s), chunky, 400 g
- salt and pepper
- chili powder
- 250 g cheese, grated
- oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Brown the ground beef in a pan with plenty of oil and add tomato paste, a little salt, and pepper. Transfer the ground beef to a bowl and set aside. Now fry the onions, garlic, corn, bell peppers, and chili powder in the pan and add the ground beef back in. Season to taste. Spread the flour tortillas with sour cream and add a small ladleful of the meat mixture to each one, roll them up, and place them in the baking dish. Spread the remaining sour cream and chopped tomatoes over the tortillas, then sprinkle with cheese. Bake in the oven at 160°C (convection oven) for about 25 minutes, or slightly longer.
