Endive salad with fried bacon

Ingredients for 4 servings:

  • ½ head of endive, depending on size
  • ½ baguette(s)
  • 1 small garlic clove(s)
  • some olive oil
  • 10 walnuts, chopped
  • 8 shallots
  • 125g bacon
  • 2 tbsp dry white wine
  • 2 tbsp white wine vinegar
  • salt and pepper
  • 1 tbsp mustard
  • some garlic, to taste

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Trim the lettuce and cut into thin strips. Slice the baguette and fry in a pan with olive oil and garlic until golden brown. Mix all the dressing ingredients, pour over the lettuce strips, and fold in. Finely slice the shallots. Arrange the lettuce on plates. Sprinkle with chopped walnuts and shallot rings. Fry the bacon in a pan with a little oil until crispy and place over the salad. Deglaze the pan with the white wine and drizzle over the salad. Serve with the toasted baguette.
