Zucchini and tomato appetizer

Ingredients for 4 servings:

  • 2 zucchinis
  • 3 tomatoes
  • 1 large onion(s)
  • 3 garlic cloves
  • 100 ml olive oil
  • 1 tbsp Italian herbs, dried
  • Pepper, coarsely ground
  • little salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Tastes best cold!

Wash the zucchini and cut it either into slices or lengthwise, then layer it in a baking dish. Just don’t slice it too thickly. Dice the tomatoes, garlic, and onion. Mix everything with the spices and olive oil and pour it over the zucchini. Bake in the oven at approximately 200°C for about 45 minutes. If the vegetables start to brown too much, cover with aluminum foil. Let cool and garnish with fresh herbs and, if desired, feta cheese.
