Ingredients for 4 servings:

  • 600 g potatoes, cooked
  • 8 tbsp oil
  • 1 onion(s), red
  • salt and pepper
  • 8 slices of bacon
  • 150 g cherry tomatoes
  • 8 small grilled sausages
  • 4 eggs
  • 1 sprig(s) sage leaves

Working time approx. 20 minutes; Cooking/baking time approx. 24 minutes; Total time approx. 44 minutes

A winter breakfast that packs a punch

Peel the potatoes and cut into chunks. Fry in 2 tablespoons of oil for about 5 minutes. Peel the onions, roughly dice them, add them to the potatoes, season with salt and pepper, and fry everything for another 5 minutes until golden brown. Fry the bacon in 2 tablespoons of oil on both sides for about 5 minutes until golden brown. Rinse the tomatoes, add them to the bacon, and heat through. Fry the sausages in 2 tablespoons of oil on both sides until golden brown. In another pan, fry 4 fried eggs in 2 tablespoons of oil. Rinse the sage, shake it dry, pick the leaves, and scatter them over the potatoes. Plate the potatoes with the fried eggs, tomatoes, sausages, and bacon. Serve with toast.
