Ingredients for 8 servings:
- 500 g apples
- 20 g butter
- 2 tbsp water
- 1 tbsp lemon juice
- 2 tbsp sugar
- 75 g butter
- 100 g sugar
- 100 g flour
- ½ tsp baking powder
- 2 eggs

Eva’s Pudding – Apple Pudding from England
Peel the apples and remove the cores. Cut them into large pieces and place them in a medium saucepan with the water and lemon juice. Stir, then cover the pan and simmer for about 5 minutes, until the apples have softened and can be mashed. Then stir in the butter and sugar. You can add a little more lemon juice for extra juiciness (for example, if the apples have been in the cellar for a while). Transfer the apple mixture to a gratin dish; there should still be room, as the apples will be covered with the batter later. Batter: Beat the butter, sugar, and eggs until light and fluffy. Mix the flour and baking powder and fold into the egg mixture. Then cover the apples with the batter. Bake in a preheated oven at 180°C for 35 minutes. Best served warm with freshly whipped cream.
