Ingredients for 4 servings:
- 400 g pumpkin flesh, diced (e.g. Oranger Knirps)
- 1 onion(s)
- 5 dl broth (vegetable or meat broth)
- ½ vanilla pod(s)
- 2 dl cream or milk
- e.g. salt and pepper
- 1 tbsp butter
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Heat butter in a saucepan, chop onion, and sauté for one minute. Add pumpkin and sauté for 3 minutes over medium heat. Deglaze with stock. Scrape out the vanilla pod, add the seeds, and cook the pod. Cover and simmer for about 20 minutes over medium heat. Remove the pod, purée, stir in cream or milk, and season with salt and pepper. The Orange Knirps makes the soup wonderfully thick and creamy; for me, it’s the perfect variety for soups; the consistency is similar to potato.
