Quick zucchini soup

Ingredients for 4 servings:

  • 500 g zucchini
  • 2 onions
  • 1 liter vegetable broth
  • 1 bunch of parsley
  • 3 tbsp crème fraîche
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and chop the zucchini. Peel and quarter the onion. Cook both in the broth for 15 minutes. Add the parsley and crème fraîche. Puree everything (best done in a pot with an immersion blender). Season with salt and pepper and serve hot or chilled.
