  • 4 Pc. Spring onions
  • 2 Pc. Red pepper
  • 1 Pc. Small pineapple
  • 250 g Dried jackfruit, diced
  • 300 g Pumpkinism
  • 250 ml Coconut milk
  • 1 tsp Turmeric
  • 1 tsp Garam Masala
  • 1 tsp Sweet paprika
  • Salt pepper
  • 2 tbsp Maple syrup
  • 1 Pc. Lime
  • 2 tbsp Homemade ketchup at will
  • 100 g Cashew nuts
  • 1 bunch Parsley

Instructions
 

  • Heat coconut oil in a pan and fry the spring onions cut into rings and the diced paprika pieces in it.
  • Add the diced jackfruit and pineapple pieces with the spices and fry everything briefly. Deglaze with pumpkin and coconut milk. Add maple syrup, lime juice and, if necessary, ketchup. Simmer to a creamy sauce over medium heat for about 20-25 minutes. At the end, season with salt and pepper. Serve with roasted cashew nuts and chopped parsley.
  • This fits e.g. millet, rice, quinoa or finely chopped cauliflower rice. If you want, you can add flatbread, naan and chapatis to it. If you like, you can add a dollop of natural yogurt, sour cream or Greek yogurt on top.

Tip:

  • If you have a little more time to spare, you can marinate the jackfruit cubes about an hour beforehand with an oil and spice mixture.
