Grate the potatoes into slices using a grater. Briefly place the slices in a bowl of cold water and then dry with a tea towel. Mix the spices (I use about enough for one potato to make chips – if you need more, double the amount). In a bowl, mix the potato slices with the oil and about 1/3 of the spice mix. Place some baking paper on a plate and spread about a third of the spice mix on the paper. Arrange the potato slices on the plate so they barely touch each other, then sprinkle the rest of the spice mix over the potatoes. Microwave at about 600-800 watts or on the highest setting for about 6 minutes. Since this varies depending on the microwave, we recommend trying a little less and heating it a second time if necessary. When the chips are crispy, they’re ready. Tip: The chips can also be prepared without oil and then make a very healthy snack.
