Ingredients for 1 servings:
- 2 m.-large kiwi(s), ripe
- 140 g desiccated coconut
- 3 m.-large egg whites
- 1 pinch of salt
- ¼ tsp pure tartar baking powder
- n. B. sugar
- Fat for the mold
Instructions

Preheat the oven to 200°C. Grease a baking pan. Beat the egg whites with a pinch of salt until stiff peaks form. Slowly stir in the baking powder. Puree the kiwis thoroughly and mix with the desiccated coconut in a bowl. Mix in the egg whites with a large spoon or with your hands and mix everything thoroughly. Add sugar to taste. Pour the batter into the baking pan, press down firmly, and bake at 180-200°C for about 30-40 minutes. The cake tastes even better if it has rested overnight.
