Extremely delicious sauerkraut

Ingredients for 4 servings:

  • 1 kg sauerkraut
  • 10 juniper berries
  • 1 bay leaf
  • 5 carnations
  • 10 peppercorns
  • 1 onion(s)
  • 1 small apple, sour, or some apple juice
  • 500g bacon
  • 2 tbsp lard
  • 1 cup of water, possibly white wine, more if needed
  • 1 potato(s), raw grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 hours; Total time approx. 3 hours 10 minutes

Swabian style

Simmer the sauerkraut with water, bay leaf, juniper berries, cloves, peppercorns, onions, and bacon for about 2 hours. Then add the peeled, finely chopped, cored apple, or a little apple juice. Simmer for another hour. Top up with a little water or white wine if necessary. When the cabbage is soft, stir in the lard and add more seasoning, if desired. Finally, add the grated potato and bring back to a boil.
