Fake Labskaus with minced meat and cheese

Ingredients for 4 servings:

  • 1 kg potatoes
  • nutmeg powder
  • 60 g butter or margarine
  • 1 onion(s), finely diced
  • 400 g minced beef
  • e.g. salt and pepper
  • e.g. paprika powder
  • 125 ml broth
  • 1 jar beetroot, approx. 200 g drained weight
  • 2 large gherkins, diced
  • 4 Bismarck herring(s), diced
  • 200 g Gouda, medium-aged, diced
  • 4 eggs

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Peel the potatoes and boil them. Sauté the onion in butter, add the minced meat and fry. Season with salt, pepper, and paprika, and pour in the broth. Simmer for about 10 minutes. Season the cooked potatoes with a little nutmeg and mash. Tip: If desired, you can also add a little milk, just like for mashed potatoes. Fry the eggs to make fried eggs. Mix the potatoes, beets, cucumbers, herring, and cheese into the minced meat and serve, topping the stew with a fried egg per person.
