Falafel bowl with parsley salad and hummus

Ingredients for 2 servings:

  • 2 large tomatoes
  • 1 bunch of parsley
  • some leaf spinach or lamb’s lettuce
  • 3 tbsp olives from the jar
  • 1 bag of falafel dry mix (175 g)
  • 1 shallot(s)
  • 2 tbsp hummus
  • 1 tsp tahini
  • 1 shot of milk
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Prepare the falafel balls according to the package instructions. Wash and chop the parsley. Peel the shallot and dice it into small cubes. Wash and chop the tomatoes. Place the parsley, onions, and tomatoes in a bowl. If desired, add spinach leaves or lamb’s lettuce, depending on how strong the parsley flavor is. For the dressing, mix the tahini with a little milk and a dash of the olive juice (from the jar). Season with salt and pepper. Divide the dressing, olives, and falafel balls over the salad. Top with some hummus (or homemade)! Enjoy!
