Ingredients for 6 servings:
- 1 ½ kg leg(s) (boneless fallow deer leg)
- 2 onions
- 2 bay leaves
- 10 juniper berries
- 6 coriander berries
- 6 peppercorns, red and green
- 1 sprig(s) rosemary
- 1 tbsp clarified butter
- 1 tbsp jam (cranberry jam)
- 1 tbsp honey
- ½ liter red wine, good
- 1 ½ liters of water
- 1 ½ tbsp salt
- 1 ½ tbsp flour
- Jam, (cranberry jam)
Instructions

Fallow deer leg super delicious
Skin the fallow deer leg, wash it lightly, and pat it dry. Heat clarified butter in a roasting pan and sear the meat all over. Brown the peeled, finely chopped onion. Add all the herbs and spices to the roast. Deglaze with hot water and pour in the red wine. Roast in the preheated oven at 220°C for 20 minutes, then reduce the temperature to 190°C and continue roasting for another 1.5 hours. Now pour the cranberry jam and honey over the roast. After 2 hours and 20 minutes, turn off the oven and let it rest for another 20 minutes. Place the meat on a platter and return it to the oven to prevent it from cooling down. Strain the sauce through a sieve and thicken with the flour. Carve the meat and serve with cranberry jam and the sauce.
