Apricot jam with coconut

Ingredients for 1 servings:

  • 1 kg apricot(s), ripe (weighed with stones)
  • 200 ml coconut milk (can or tetra)
  • 2 tbsp desiccated coconut
  • 30 ml rum
  • 1 kg gelling sugar 1:1

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Wash and pit the apricots. Halve them and puree them very finely in a food processor or with an immersion blender. Transfer to a bowl and mix well with the coconut milk, desiccated coconut, rum, and the gelling sugar. Let stand for 1 hour. Then transfer to a large saucepan, bring to a boil while stirring, and simmer gently for 4 minutes. Stir frequently to prevent burning. Pour into clean jam jars and seal immediately. Tastes absolutely delicious!
