Farmer's breakfast with wild garlic paste

Ingredients for 1 servings:

  • 2 potatoes, raw
  • Oil, for frying
  • 50 g bacon, diced
  • 1 onion(s)
  • 1 chili pepper(s), chopped, without seeds
  • 2 eggs
  • 1 shot of milk
  • 1 tbsp wild garlic paste (see recipe in the DB)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the potatoes, heat the pan, slice or grate the potatoes into thin (2 mm) slices. Add oil to the pan and fry the potato slices on one side for about 3 minutes until crispy. In the meantime, peel and dice the onion. Turn the potatoes over, then add the diced onion and bacon and the chili to the pan. Stir occasionally. Whisk the eggs with the milk and wild garlic paste, season with salt and pepper. When the potatoes have reached the desired consistency, deglaze with the scrambled eggs. Turn off the heat and mix everything on the hot plate until the eggs are set. Mixing the wild garlic paste with the eggs before frying gives the scrambled eggs a lovely green hue.
