Farmer's pot with sweet potatoes, rice and vegetables

Ingredients for 6 servings:

  • 1 kg minced meat
  • 900 g sweet potatoes
  • 4 carrots
  • 400 g bell pepper(s)
  • 650 g tomatoes, chopped, from the can
  • 1 can of corn, approx. 340 g
  • 1 can kidney beans, approx. 400 g
  • 125 g rice
  • 3 tbsp tomato paste
  • 500 ml vegetable stock
  • 1 ½ cups sour cream
  • 1 ½ tbsp oil
  • salt and pepper
  • Paprika powder, hot

Instructions

Working time approx. 25 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 25 minutes

Peel the sweet potatoes and carrots and cut into small pieces. Also finely chop the bell peppers. Heat the oil in a pot and fry the minced meat until crumbly. Deglaze with the canned tomatoes, tomato paste, and stock. Add the sweet potatoes, carrots, bell peppers, kidney beans, and corn. Cover and simmer over medium heat for about 40 minutes. Meanwhile, prepare the rice according to the package instructions. Add the cooked rice to the pot for the last 10 minutes of cooking time. To reduce the heat, simmer uncovered for about an additional 10 minutes. Finally, season to taste and stir in the sour cream. Serve with baguette, if desired.
