Fattoush Salad

Ingredients for 4 servings:

  • 1 lettuce or 1/3 white cabbage
  • 3 tomatoes
  • ½ large cucumber(s)
  • 6 radishes
  • 1 small onion(s)
  • 1 handful of parsley leaves
  • 2 flatbreads
  • 2 tbsp olive oil
  • 6 tbsp olive oil
  • 1 lemon(s), juice
  • 1 clove(s) garlic, optional
  • 1 tsp sumac
  • 1 tsp mint, dried
  • salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 30 minutes

Trim the lettuce (or white cabbage) and cut into strips. Trim the tomatoes, cucumbers, and radishes and cut into small cubes. Peel the onion and chop it with the parsley. Open the flatbreads and cut into pieces. Toss in 2 tablespoons of olive oil, then bake on a rack in a preheated oven at 180°C (top/bottom heat) for 5 minutes (or alternatively, in a pan on the stovetop). Combine the dressing ingredients. Mix everything together just before serving.
