Fennel cake with feta cheese

Ingredients for 8 servings:

  • 100 ml olive oil
  • 1 garlic clove(s), finely chopped
  • 1 bulb(s) of fennel (approx. 300 g, cut into strips)
  • 4 eggs
  • 200 g flour
  • 1 tsp baking powder
  • 50 g tomato(s), dried cut into strips
  • 150 g feta cheese, in cubes
  • 3 tbsp parsley, finely chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 160°C. Heat 2 tablespoons of olive oil, sauté the garlic and fennel for about 2 minutes, and let cool. Whisk 50 ml of oil with the eggs. Mix in the flour and baking powder, fennel strips, tomato strips, feta cubes, and parsley, and gently season with salt (the feta cheese already contains a lot of salt) and pepper. Pour into a Flexiform (or a regular, greased baking dish) and bake for 75 minutes. Let cool in the dish for 10 minutes, then carefully turn out. Serve lukewarm or cold, sliced.
