Fennel – Orange Salad

Ingredients for 3 servings:

  • 300 g fennel
  • 2 oranges
  • 3 tbsp pumpkin seeds, peeled, roasted
  • 1 tbsp Balsamic vinegar, white
  • 1 tbsp oil (pumpkin seed)
  • Lemon pepper
  • herbal salt
  • 1 tbsp honey
  • 2 sprigs of parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Remove the stems and root from the fennel, wash, and finely grate into a bowl. Over this bowl, peel the oranges thickly, including the white pith, letting the juice drip into the bowl. Slice the oranges very finely crosswise. Add to the fennel. Add the marinade ingredients, mix thoroughly, and let stand for about 30 minutes. Before serving, stir in the pumpkin seeds and sprinkle with the fennel greens (if available) or parsley.
