Make the chocolate mixture from the ground hazelnuts, cocoa powder, vanilla extract or the seeds of two vanilla pods, sea salt, and maple syrup. Shape them into about 10 small balls and press a whole hazelnut into each one. Toast the chopped hazelnuts or almonds in a dry pan and spread them on a flat plate. Dip the chocolate balls in either maple syrup or melted dark chocolate and roll them in the chopped hazelnuts or almonds. Place the Ferrero Rocher balls in the freezer for about 30 minutes and then refrigerate. This will keep the chocolate nice and crisp.
