Feta bread with walnuts and olives

Ingredients for 1 servings:

  • 80 g walnuts
  • 80 g black olives
  • 200 g feta cheese
  • 250 g flour (wholemeal)
  • 1 packet of baking powder
  • 2 tsp herbs, Italian
  • ½ tsp salt
  • 4 eggs
  • 8 tbsp olive oil or rapeseed oil
  • 6 tbsp milk or water
  • pepper
  • Butter, for the mold
  • Breadcrumbs or durum wheat semolina for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Grease a loaf pan with butter and sprinkle with breadcrumbs or semolina. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Chop the walnuts and roughly crush them with the back of your hand. Pit and slice the olives, if desired. Cut the feta cheese into small cubes. Mix the flour with the baking powder, salt, and herbs. Combine the flour mixture, eggs, oil, and milk to form a smooth batter, season with pepper to taste. Stir in the walnuts, olives, and feta cheese. Pour the batter into the loaf pan, smooth it out, and bake for about 40-50 minutes at 180 degrees Celsius (350 degrees Fahrenheit). Since every oven bakes differently, please test for doneness with a skewer. Serve with a crisp salad and a glass of red wine. Variation: Bake the batter in a 28 cm tart pan instead of a loaf pan; this will make a flatbread. The baking time is then reduced to approx. 20-25 minutes.
