Ingredients for 1 servings:

  • 100 g hazelnuts, sliced
  • 3 m.-sized banana(s)
  • 30 g butter
  • 200 g honey
  • 2 eggs
  • 3 tbsp milk
  • 1 vanilla pod(s)
  • 250 g flour, wheat flour, freshly ground
  • 1 tsp baking powder
  • 1 pinch of salt

Instructions

Roast the hazelnuts in a saucepan until light brown, remove from the pan, and let cool. Peel the bananas and mash them with a fork. Heat the butter in the saucepan and briefly sauté the banana puree, then let cool. Beat the honey and egg yolks with a hand mixer until frothy. Add the milk, vanilla pulp, and banana puree and mix well. Fold in the wheat flour, baking powder, salt, and sliced ​​hazelnuts with a hand mixer. Beat the egg whites until very stiff peaks form and carefully fold them in. Thoroughly grease a 30cm loaf pan with butter, pour in the mixture, level off, and bake in the oven at 180°C for 60-75 minutes. Tastes best warm, brushed with butter, and is a hit at any brunch!
