Ingredients for 1 servings:
- 100 g hazelnuts, sliced
- 3 m.-sized banana(s)
- 30 g butter
- 200 g honey
- 2 eggs
- 3 tbsp milk
- 1 vanilla pod(s)
- 250 g flour, wheat flour, freshly ground
- 1 tsp baking powder
- 1 pinch of salt
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Roast the hazelnuts in a saucepan until light brown, remove from the pan, and let cool. Peel the bananas and mash them with a fork. Heat the butter in the saucepan and briefly sauté the banana puree, then let cool. Beat the honey and egg yolks with a hand mixer until frothy. Add the milk, vanilla pulp, and banana puree and mix well. Fold in the wheat flour, baking powder, salt, and sliced hazelnuts with a hand mixer. Beat the egg whites until very stiff peaks form and carefully fold them in. Thoroughly grease a 30cm loaf pan with butter, pour in the mixture, level off, and bake in the oven at 180°C for 60-75 minutes. Tastes best warm, brushed with butter, and is a hit at any brunch!
