Fried feta cheese on leaf spinach

Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 1 garlic clove(s)
  • 2 tbsp oil
  • 1 pack of leaf spinach (frozen)
  • 1 pack of feta cheese
  • 2 tbsp breadcrumbs
  • 1 tsp thyme, dried
  • 1 egg(s)
  • 2 m.-large tomato(s)
  • salt and pepper
  • some nutmeg
  • possibly pine nuts

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and chop the onion and garlic, and sauté in 1 tablespoon of hot oil. Add the spinach (still thawed) and pour in 100 ml of water. Cover and simmer over medium heat for about 15 minutes. Cut the feta cheese into four equal slices. For the breading, mix the breadcrumbs and thyme and beat the egg. Coat the feta cheese first in the egg, then in the breading, and fry in 1 tablespoon of oil for 3-4 minutes on each side until golden brown. Peel, wash, and dice the tomatoes and add them to the spinach about 5 minutes before the end of the cooking time. Season the spinach with salt, pepper, and nutmeg and serve with the feta. If desired, sprinkle with toasted pine nuts. This goes well with flatbread.
