Feta – Spinach – Mushrooms

Ingredients for 4 servings:

  • 8 large mushrooms
  • 350 g spinach, fresh
  • 1 garlic clove(s)
  • 100 g feta cheese
  • 2 tbsp oil
  • salt and pepper
  • 250 ml cream or soy cream

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Clean the mushrooms, remove the stems, and finely chop. Heat the oil and fry the mushroom caps for 5 minutes, turning occasionally. Season with salt and pepper, and set aside. Briefly sauté the chopped mushroom stems and the crushed garlic clove. Add the feta, spinach, and cream, and season with salt and pepper. Stuff the mushroom caps with the filling and bake in the oven at 200°C for about 10 minutes.
