Filled Quinoa Mushrooms Baked with Cheese
The perfect filled quinoa mushrooms baked with cheese recipe with a picture and simple step-by-step instructions.
- 250 g Large brown mushrooms
- 30 g Chopped cashew nuts
- 80 g Quinoa cooked in double the amount of water
- 75 g Gorgonzola
- 1 tbsp Orange oil
- 1 tsp Thyme
- Salt pepper
- Unscrew the stalks from the mushrooms and dice them. Brush the inside of the mushrooms with a dollop of cream cheese.
- Mix the quinoa, mushroom stalks, chopped nuts, orange oil, thyme, Gorgonzola (save a little) and season with salt and pepper. Pour into the mushrooms and sprinkle with the remaining Gorgonzola.
- Bake in a greased pan in the preheated oven on the middle rack at 200 degrees for about 20-25 minutes.
- Tastes delicious with a salad as a main course, but can also be served as a side dish. Tastes warm and cold.
