Fillets wrapped in ham

Ingredients for 4 servings:

  • 600 g pork fillet(s) or turkey medallions
  • 2 packs of Black Forest ham
  • 10 g herb butter, soft
  • 3 garlic cloves
  • 1 pack of herbs, frozen-8 herbs
  • 3 cups of cream or Cremefine
  • 1 pinch(s) of salt and pepper
  • 2 tbsp rapeseed oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 55 minutes

Cut the pork fillet into medallions, flatten slightly, and season with salt and pepper. Then sear briefly on both sides in hot rapeseed oil. Grease a baking dish with herb butter. Wrap each medallion in a slice of ham and fan out the medallions in the baking dish. Peel and press the garlic cloves, then scatter them over the wrapped medallions. Sprinkle the frozen herbs over the medallions. Pour on the cream or Cremefine and bake in the oven at approximately 150°C (fan-assisted) for approximately 1-1.5 hours. Serve with croquettes or hash browns and seasonal vegetables.
