Ingredients for 4 servings:
- 600 g potatoes
- 1 stalk(s) leek
- 2 large onions
- 3 dl white wine
- 2 tbsp honey
- 3 bananas
- salt and pepper
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes
Peel the potatoes and cut into small cubes. Then fry them in a frying pan with a little oil. Meanwhile, finely chop the leek and onion and sauté them in a separate pan with olive oil. Then deglaze with white wine and reduce. Add a little more white wine if desired. Then add the honey to the leek and onion mixture and simmer briefly. Also dice the bananas. Add them when the potatoes are almost cooked. The bananas will break down as they continue to cook. When the potatoes are cooked, add the leek and mix everything well. Season with salt and pepper.
