Ingredients for 1 servings:

  • 60 g butter
  • 60 g sugar
  • 30 g flour
  • ½ tsp baking powder
  • 50 g macadamia nuts, ground
  • 20 g macadamia nuts, roughly chopped
  • 1 tsp, leveled lemon zest
  • 2 egg whites
  • 6 raspberries, frozen
  • Powdered sugar for sprinkling

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

for 6 pieces

Melt the butter in a saucepan until light brown, then strain through a fine sieve and let cool. Preheat oven to 230 degrees Celsius (fan). Beat the egg whites until stiff peaks form. Sift the flour and mix with the macadamia nuts, sugar, flour, baking powder, and lemon zest. Pour the egg whites over the mixture and mix everything together. Add the lukewarm nut butter to the mixture and fold in. Fill 6 rectangular financier tins or silicone muffin tins two-thirds full with the batter and top with a frozen raspberry. Place the financiers in the oven, reduce the temperature to 200 degrees Celsius (400 degrees Fahrenheit), and bake for 15 minutes (refer to your oven’s instructions!). Let the financiers cool and dust with powdered sugar before serving.
