Fine almond stars

Ingredients for 1 servings:

  • 125 g almonds
  • 1 m.-sized egg(s)
  • 275 g flour
  • 140 g powdered sugar
  • 150 g butter
  • 1 pack of flavoring (orange peel)
  • 1 pinch of ginger powder
  • 50 g almond flakes
  • Flour , for the work surface

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Roast the almonds, let them cool, and then finely grind them in a food processor. Separate the egg. Knead the flour, 50g powdered sugar, fat, ground almonds, orange zest, ginger, and egg yolk into a dough. Cover and chill for about 1 hour. Roll out the dough on a floured surface to a thickness of about 3mm and cut out stars using a cookie cutter. Place on two baking sheets lined with baking paper. Sieve 75g powdered sugar through a sieve. Beat the egg whites until stiff and gradually add the powdered sugar. Brush the stars with the egg whites. Sprinkle with flaked almonds. Bake the cookies in a preheated oven at 175°C (top/bottom heat) for 18–20 minutes. Let cool and sprinkle with the remaining powdered sugar.
