Fine Chili con Carne – low in fat

Ingredients for 6 servings:

  • 500 g tartar
  • 1 gr. can/n kidney beans
  • 1 gr. can/n beans, white
  • 2 can/n tomatoes, chunky
  • 4 onions
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 red chili pepper(s)
  • 1 red bell pepper(s)
  • Paprika powder, sweet
  • Salt and pepper from the mill
  • possibly sambal oelek
  • 1 bar of dark chocolate (70 – 80% cocoa)
  • 250 ml vegetable stock, about
  • possibly tomato paste
  • 1 pack of reduced-fat feta cheese, can be omitted

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with tartar and a hint of dark chocolate

Heat the olive oil in a large pot and sauté the roughly chopped onions. Add the tartar and fry. Add the diced bell peppers and sauté for a few minutes. Then add the chopped tomatoes, beans, crushed garlic, and finely chopped chili. Top up with vegetable stock, if desired. If it gets too runny, simply thicken with a little tomato paste. Simmer for a few minutes. Season to taste and melt the chocolate bar in it. We like it best with rice, and we always crumble a generous portion of feta cheese over it before serving!
