Ingredients for 1 servings:

  • 400 g sugar
  • 200 g honey
  • 300 g butter
  • 360 g beet syrup, dark
  • 3 eggs
  • 1 bag of gingerbread spice, 15 g
  • 1 lemon(s), grated peel
  • 8 g cinnamon
  • ¼ tsp clove powder
  • 200 g raisins
  • 200 g candied lemon peel
  • 200 g desiccated coconut
  • 120 g almonds, ground
  • 4 apples, grated
  • 8 g ammonium bicarbonate, dissolved in a little water (alternatively baking powder)
  • 800 g wheat flour or spelt flour

Instructions

Working time approx. 3 hours; Cooking/baking time approx. 15 minutes; Total time approx. 3 hours 15 minutes

Melt the sugar, honey, butter, and sugar beet syrup over low heat. Add the remaining ingredients to the liquid mixture and mix thoroughly. This works best with a hand mixer fitted with a dough hook. Drop the dough onto 5cm diameter baking sheets with spoonfuls and bake at 180°C (convection oven) for about 15 minutes. Decorate with chocolate coating. If you prefer a less sweet treat, reduce the sugar. Yields about 120 wafers.
