Fire poppy fresh tomato sauce with scampi

Ingredients for 3 servings:

  • 1 ½ kg beefsteak tomatoes
  • 2 onions
  • 2 points scampi, frozen
  • Salt
  • pepper
  • 1 tsp sugar
  • rosemary
  • Thyme
  • basil
  • oregano
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the scampi half a day in advance. First, pour boiling water over the tomatoes, then peel them. Then, dice the peeled tomatoes into small cubes. Also dice the onions. Heat the oil in a pan. When it’s hot enough, add the diced onions and cook over medium heat for 15-20 minutes until a creamy sauce forms. Season the sauce with salt, pepper, and sugar, then add the scampi and simmer for another 5-10 minutes. Season with herbs, and the sauce is ready. Serve with any kind of pasta.
