Fish curry from Goa

Ingredients for 4 servings:

  • 2 tbsp tikka masala paste
  • 400 g coconut milk
  • 1 tsp chili paste, fresh
  • 2 bay leaves
  • 450 g fish (cod or haddock)
  • 1 bell pepper(s), red
  • 2 tsp lemon juice
  • 1 tbsp white wine vinegar
  • 2 tsp sugar
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Bring the tikka masala paste, coconut milk, chili paste, and bay leaves to a boil, cover, and simmer for 5 minutes. Cut the fish into 3 cm pieces and slice the bell peppers. Add both. Cover and simmer for about 5 minutes, until the fish is cooked through. Carefully stir in the lemon juice, vinegar, and sugar and season to taste. Serve with rice.
