Fish: Fried Cod with Fresh Mixed Vegetables

The perfect fish: fried cod with fresh mixed vegetables recipe with a picture and simple step-by-step instructions.

  • 4 piece Cod fillets
  • 2 tbsp Freshly squeezed lemon juice
  • 2 tsp Lemon pepper
  • 0,5 tsp Salt
  • 2 Msp Black pepper from the mill
  • 3 tbsp Breadcrumbs
  • 2 piece Whisked eggs
  • 2 tbsp Olive oil
  • 1 size Zucchini fresh
  • 4 piece Fresh tomatoes
  • 2 piece Red peppers
  • 200 g Mushrooms brown
  • 3 piece Carrots
  • 1 small Cucumber
  • 1 size Fresh onion
  • 1 tbsp Herbal wort
  • 1 pack Italian frozen herb mixture
  • 60 g Butter
  • 1 middle Red chilli pepper
  1. Rinse the cod fillet under cold water and pat dry. Then drizzle with lemon juice on both sides and set aside for 15 minutes.

Preparing stir-fried vegetables:

  1. Wash the zucchini, pat dry and cut into slices. Wash, peel and slice the carrots. Wash, clean, core and cut the peppers into strips. Halve the tomatoes, remove the seeds and cut into pieces. Clean the mushrooms, peel off the onion and cut both into slices. Wash and dab the cucumber, cut out the soft core parts and cut the cucumber into pieces. Wash and cut the chilli pepper, remove the seeds and cut into rings.

Preparation cod:

  1. Season the soured cod fillet with salt and lemon pepper. First pull through the beaten egg, then turn in breadcrumbs. Heat the butter in a pan and fry the fish until golden on both sides. Brush the fish with melted butter every now and then while it is frying. Then take it out and keep it warm.

Preparation of stir-fried vegetables:

  1. Heat the cooking oil in a large pan and fry the carrot slices and the pepper strips first. Now add the rest of the prepared vegetables and cook for about 25 minutes. Season everything with the herb seasoning, salt and pepper. Carefully fold in the Italian frozen herb mixture about 10 minutes before the end of cooking.

A notice:

  1. Do not cook the vegetables too long, they should still be firm to the bite!
  2. Arrange the fried cod fillet with the vegetables on plates. Long grain rice tastes very good with it.
