Fish: Matjes with Bacon Beans

Ingredients
 

  • 2 Herring fillets
  • 75 g Bacon
  • 1 small Onion
  • 1 tbsp Oil, neutral
  • 2 tbsp Butter
  • 100 g Green Beans
  • Salt
  • Black pepper from the mill

Instructions
 

  • Finely dice the bacon and onions.
  • Heat the oil in a pan and fry the bacon in it for 5 minutes. Add the onion and fry for 3 minutes. Add butter and melt.
  • Boil the beans in plenty of boiling salted water until they are firm to the bite, drain and mix with the bacon and onion mixture. Season with salt and pepper.
  • Arrange the matjes fillets with the bacon beans and serve.
  • This goes well with jacket potatoes or baguettes.
