Ingredients for 2 servings:

  • 2 fish fillets (halibut, redfish)
  • 1 onion(s)
  • 1 small zucchini
  • ½ red bell pepper(s)
  • 1 clove(s) garlic
  • ½ lemon(s)
  • olive oil
  • chili oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and dry the fish. Season with salt and pepper, and other spices if desired. Cut the onions into rings, slice the garlic, strip the bell peppers, and slice the zucchini into slightly thicker slices. Sauté in olive oil until golden brown, then season with salt and pepper. Cut the baking paper into two squares approximately 30 x 30 cm. Place the vegetables in the center of each sheet. Place the fish on top of the vegetables and drizzle with lemon juice. Add a few drops of chili oil, if desired. Fold/crumple the corners of the baking paper in the middle like a gift, or staple them tightly to seal in the air and retain all the flavors. Place on a baking tray in a preheated oven at 170°C for 10-15 minutes (depending on the thickness of the fish). Rice makes a great side dish, as steaming allows the fish to develop a rich broth, preventing it from becoming dry. Or simply without a side dish, since the vegetables are already included.
