Ingredients for 12 servings:

  • 200 g wholemeal butter biscuits
  • 100 g butter, reduced fat
  • 900 g cream cheese, light
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest
  • 4 eggs
  • 35 g flour
  • 2 tsp vanilla extract
  • 250 g low-fat curd cheese, 10% or 20% fat
  • some sweetener
  • some low-fat curd cheese
  • possibly berries

Instructions

Working time approx. 25 minutes; Rest time approx. 4 hours; Cooking/baking time approx. 1 hour 25 minutes; Total time approx. 5 hours 50 minutes

For the base, crush the whole-wheat butter biscuits and mix them with the melted butter. The mixture is then poured into the bottom of a lightly greased 26 cm springform pan and baked for 10 minutes at 180°C (top/bottom heat). Next, the filling ingredients are mixed on low heat, poured into the cooled base, and baked for 15 minutes at 220°C (top/bottom heat), then for another 45 to 60 minutes at 135°C (275°F) (tested with a skewer). Let the cake cool for at least four hours. Finally, spread quark and berries on top. Per serving: 230 kcal
