Ingredients for 1 servings:
- 375 ml soy milk (soy drink) (vanilla) or almond milk
- 150 g spelt flour
- 4 eggs
- 4 tbsp agave syrup or honey
- some stevia or almond butter
- some coconut oil or margarine
- e.g. raisins, optional
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes
Variation of Kaiserschmarrn
Separate the four eggs and beat the egg whites in a separate bowl until stiff peaks form. Combine the four egg yolks with the agave syrup or honey and beat until frothy. Add the spelt flour and soy milk and beat until smooth, then fold in the egg whites and add raisins, if using. If using raisins, let them soak for 10 minutes. Melt the coconut oil or margarine in a pan, then add a ladleful of Kaiserschmarrn to the pan. Let it thicken briefly, then tear and turn until nicely browned and fluffy on both sides. Finely grind the stevia in a blender, such as a Thermomix, until it forms a “stevia powder,” then sprinkle it over the Kaiserschmarrn. Or serve with almond butter.
