Ingredients for 1 servings:

  • 240 g beans, white, cooked
  • 240 g beans, black or kidney beans, cooked
  • 4 eggs
  • 2 bananas, fully ripe
  • 10 dates, more to taste
  • 3 tbsp milk or oat milk
  • 3 tbsp orange juice
  • 2 tsp baking powder
  • some espresso powder
  • 1 vanilla pod(s), pulp
  • 3 tbsp cocoa powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Rinse the white beans thoroughly in cold water, drain, and blend them together with 2 eggs, 1 banana, 5 dates, 1 teaspoon of baking powder, vanilla seeds, and milk, and set aside. Rinse the black beans in cold water, drain, and blend them with the remaining ingredients. Preheat the oven to 175°C (350°F). Pour both batters into a loaf pan or 12 muffin cups and mix lightly with a fork to create a marbled texture. Bake the cake for about 35 minutes; muffins need about 20 minutes. Then let it cool completely before removing it from the pan. It’s best to use silicone baking cups for the muffins. The whole cake has about 1170 kcal and is very high in protein, making it ideal for a healthy, fitness-friendly diet.
