Ingredients for 1 servings:

  • 300 g mango(s), chopped
  • 250 g Skyr
  • 150 g banana(s), chopped
  • 50 g protein powder
  • 30 g spelt bran
  • 30 g almond flour
  • 30 g coconut flakes
  • 20 g xylitol (sugar substitute)
  • 20 g vanilla pudding powder
  • 10 g psyllium husks
  • 10 g baking powder
  • 100 ml milk substitute (oat-almond drink, e.g. from Alpro)
  • Butter for the molds
  • powdered sugar for sprinkling

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Protein power food

Combine all ingredients in a mixing bowl and mix. To ensure a smooth mix, add the dry ingredients first, followed by the fruit, skyr, and almond-oat milk. Grease a muffin tin with butter substitute and fill each cavity three-quarters full with the mixture. Bake in a preheated oven at 180°C (top/bottom heat) for about 30 minutes. Sprinkle with powdered sugar, if desired. This mixture makes enough for 18 muffins.
