Ingredients for 1 servings:

  • 500 g flour
  • 200 ml water, warm
  • 200 ml butter, melted
  • 1 cube of yeast
  • 3 eggs
  • 100 ml milk, warm
  • ½ tsp salt
  • 1 tbsp flour
  • 10 eggs
  • 1 kg cheese (halloumi), grated
  • 2 tbsp mint, shredded
  • 100 g raisins
  • 2 tsp baking powder
  • 1 egg(s), beaten
  • some sesame seeds for sprinkling

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Traditional pastry from Cyprus. Makes about 25 pieces.

For the filling, mix the grated cheese with the flour, baking powder, raisins, mint, and eggs in a bowl. Cover with a cloth and let stand for 2-3 hours. Now for the dough, knead the flour, salt, sugar, dissolved yeast, milk, water, and melted butter. Gradually knead in the eggs until you have a thick dough that no longer sticks to your hands. Cover with a cloth and let rise for an hour. Then roll out to about 1.5 cm thick and cut out circles of about 15 cm. Place 1-2 tablespoons of the filling in the center of each piece of dough and fold up the edges. It’s best to press the edges firmly with a fork. Brush the flaounes with a beaten egg and sprinkle with sesame seeds. Bake in the oven at 160-180°C for 35-40 minutes until golden brown.
